    Mesquite beans can be harvested and processed at two different stages of development when they're still tender, they can be made into jelly; once fully mature, the beans are harvested, dried for about 2 months, then ground into flour using a hammer mill. The resulting flour is very high in protein, slightly sweet tasting, and glutenfree.
